You can find muffuletta sandwiches in many places around New Orleans, where it’s been central to the city’s cuisine for more than a century. But Cochon Butcher makes a strong case for serving one of the most delicious.

For starters, this butchery makes its own meats. The genoa, mortadella, and capicola are all made from scratch in a process that takes several months. And the sesame seed roll on which it’s served is sourced from John Gendusa Bakery, where the first po’boy bread originated more than 100 years ago.

Cochon Butcher also makes its own giardiniera—a medley of green olives, carrots, pepperoncini, cauliflower, onion, celery, garlic, and vinegar that gives a muffuletta its signature bite. Unlike the traditional version, this one is served warm so the provolone melts. The bread is slightly crusty on the outside and soft on the inside, providing that distinct pleasure that only warm bread lends.
